Appearance: White powder or block, the apparent specific gravity is above 0.3, the melting point is 1100 ℃, soluble in water, insoluble in alcohol, the aqueous solution is alkaline. It has high solubility in water (187 grams per 100 grams of water at 25°C), and has a slight deliquescence.

Uses: Used as emulsifier, texture improver, chelating agent in the food industry, and also used as the raw material of alkaline water for flour products. It is often used in combination with other condensed phosphates, and is usually used to prevent canned aquatic products from producing struvite and prevent fruit discoloration; improve the expansion of ice cream, the yield of ham and sausage, and the water holding capacity of ground fish; rate, prevent cheese aging, etc.
